Turkey “Wrap”
Recipe
Ingredients
1 whole wheat tortilla (or wrap of your choice)
3-4 slices of deli turkey (lean, low-sodium)
2 tablespoons plain Greek yogurt (you can use 0% fat or 2% fat for creaminess)
1 teaspoon Dijon mustard (option for extra flavor)
1 teaspoon lemon juice (for a tangy twist)
1 tablespoon fresh herbs (like parsley, dill, or chives) - finely chopped
A handful of fresh spinach or mixed greens
2-3 slices of tomato
2-3 slices of cucumber
1 slice of cheese (optional - Swiss, cheddar, or provolone)
Salt and pepper to taste
Red onion slices
Roasted red peppers
Instructions
In a small bowl, mix the plain Greek yogurt, Dijon mustard (if using), lemon juice, chopped herbs, salt, and pepper. Stir until well combined.
Lay the whole wheat tortilla flat
Spread the Greek yogurt mixture evenly across the tortilla
Layer the turkey slices over the yogurt spread
Add the spinach or mixed greens, onions, and peppers on top of the turkey
Layer the tomato and cucumber slices over the greens
Add a slice of cheese if desired
Fold in the sides of the tortilla and then roll it tightly from one end to the other
Discussion
This was absolutely delicious.
I was a bit hesitant with the Greek yogurt spread, but it was fine. Especially after I added my California Reaper honey mustard to it (I didn’t have Dijon mustard). It was creamy with a hint of spice that made so much difference.
That said, I did not use the correct size tortilla for this. I bought 8 inch tortillas, not thinking about the amount of sauce I was about to make. I also used too much spinach, tomatoes, onions, and peppers. Thus, it wasn’t so much of a wrap, but a lovely taco.
10/10 would definitely eat again.
Calorie count wasn’t that bad for a lunch. Now, of course this will depend on what types of ingredients you use, but mine came out to around 220 calories. The tortilla shell was 70 calories. I used turkey lunch meat which was about 60 calories. I also used low fat Greek yogurt, so 2 tbsps of it was only 12 calories. Spinach was about 7 calories, the Roma tomato I used was about 11 calories. I didn’t use fresh onions and peppers, instead I used a frozen blend I had on hand. 2/3 cup of that was 20 calories. Finally, I counted my honey mustard for about 25 calories since I used a lot of it (bring on the heat!).
