Discussion
This soup was absolutely delicious.
I honestly thought about just leaving this section with that statement, but decided to go on. I’m being honest though, this was one of the best bowls of soup I had. The vegetables were nice and soft, the herbs made everything warm and delicious, the chicken just added that touch of something to the entire dish. I would 100% make an entire pot of this and eat it throughout the cold winter months.
It just made your insides warm.
This was also a great low-calorie dish. In the entire pot, I added about 4 oz of chicken which is about 250 calories. The vegetables all together was maybe 100 calories. This recipe made about 4 cups of soup, of which I ate 2, so I’m guessing a bowl of soup was about 150 calories each.
