Chia Pudding with Berries

Recipe

Ingredients

  • 2 tbsp chia seeds

  • 1/2 cup almond milk (or any milk of your choice)

  • 1/2 tsp honey or maple syrup (optional)

  • 1/4 tsp vanilla extract (optional)

  • Fresh berries (such as strawberries, blueberries, raspberries)

  • 1 tbsp chopped nuts or seeds (optional for topping)

Instructions

  1. In a bowl or jar, combine the chia seeds, almond milk, honey (or sweetner of choice), and vanilla extract (if using)

  2. Stir well to make sure the chia seeds are evenly distributed in the liquid.

  3. Cover the bowl or jar and place it in the fridge for at least 4 hours or overnight. The chia seeds will absorb the liquid and thicken, creating a pudding life texture

  4. Once the chia pudding has set, give it a good stir

  5. Top with your favorite fresh berries and chopped nuts or seeds for added crunch

Discussion

Since I enjoyed the overnight oats so much, I wanted to make sure I tried this recipe at least once this week.

Honestly, thought it was better than overnight oats. It was sweet and not too bland. The berries didn’t have the mushy texture to them like the overnight oats. The honey added a bit of something different in small clumps. Yea, would definitely eat again.

This breakfast was about 180 calories overall. The chia seeds was about 130 calories. I used unsweetened vanilla almond milk so 1/2 cups of that is about 15 calories. I also used a frozen berry medley instead of fresh berries, so 1/2 cups is about 35 calories. Definitely worth it though.
