Ingredients

  • 2 large eggs

Instructions

  1. Cook turkey sausage. If raw, cook in a pan over a medium heat until browned or cooked through, about 6-8 minutes. If pre-cooked, heat then slice or crumble.

  2. In a large skillet, heat 1 tablespoon of olive oil (or use cooking spray) over medium heat

  3. Add the diced onion and bell pepper. Saute for 3-4 minutes until they being to soften

  4. Add the zucchini and cook for another 2-3 minutes

  5. Stir in the spinach or kale and cherry tomatoes. Cook until the greens are wilted, about 1-2 minutes.

  6. Season the vegetables with salt, pepper, garlic powder, and smoked paprika (if using)

  7. In a bowl, whisk together the eggs with a pinch of salt and pepper

  8. Push the cooked veggies to one side of the skillet and pour the eggs into the cleared space

All in all, I thought this was a delicious meal. Everything was flavorable as always. I didn’t have fresh vegetables for this mix. I instead used my frozen pepper and onion blend. I used the pre-cooked Jimmy Dean Turkey Sausage patties for this recipe as well. Once one was cooked, I crumbled it up for the serving.

I would definitely make this again, even though the turkey sausage was a bit more expensive that pork.

Calorie wise, it was a small breakfast. The sausage patty was 65 calories. I used Egg Beaters which reduced the calories of the eggs to 50 calories. Spinach is basically negligible and my frozen blend of peppers and onions was about 20 calories. All together, it was about 145 calories for the meal.
