Overnight oats with chia seeds, almond milk, and berries

Recipe

Ingredients

  • 1/2 cup rolled oats

  • 1 tablespoon chia seeds

  • 1 cup unsweetened almond milk (or your preferred milk)

  • 1/2 cup mixed berries (fresh or frozen, such as blueberries, strawberries, or raspberries)

  • 1 tablespoon honey or maple syrup (optional, for sweetness)

  • 1/2 teaspoon vanilla extract (optional)

  • Pinch of salt

Instructions

  1. In a mason jar or a bowl, combine the rolled oats, chia seeds, almond milk, honey or maple syrup (if using), vanilla extract (if using), and a pinch of salt.

  2. Stir the mixture until all the ingredients are well combined. Make sure the oats and chia seeds are submerged in the almond milk

  3. Gently fold in the mixed berries. If you’re using frozen berries, they can be added directly; they will thaw overnight

  4. Cover the jar or bowl with a lid or plastic wrap and refrigerate overnight (or for at least 4-6 hours) to allow the oats and chia seeds to absorb the liquid and soften

  5. In the morning, give the oats a good stir. If the mixture is too thick, you can add a splash more almond milk to reach your desired consistency

  6. Top with additional berries, nuts, or a drizzle of honey or maple syrup if desired

  7. Your overnight oats are ready to eat! Enjoy them cold, or warm them up in the microwave for a minute if you refer them hot

Discussion

I was pleasantly surprised with this meal. It tasted good, was easy to make, and I don’t feel like my AI Life Coach thought I was dumb asking for this recipe. It was the first time I had heard of overnight oats, but I should’ve realized what it meant just through context.

This was definitely better warmed up. The berries got a bit soggy after warming it up which made for an unpleasant texture, but it was easy to ignore. I also had bought honey the day before this, so I was able to utilize it in the recipe. Unfortunately, I don’t think it made much of a difference. I couldn’t taste it at all.

As always, I don’t get the point of chia seeds besides them just existing. No taste, no texture, no anything. One day I’ll ask AI what they are in the recipe for, but not today.

Calorie-wise…whew this was high. Around 350 calories. 1 cup of unsweet almond milk was 30 calories, 1/2 cup of oats was 150 calories, 1/2 cup mixed berries was 35 calories, 1btsp chia seeds was 65 calories, and 1 tbsp honey was about 65 calories. Too high, but it left me full for longer, so there was a plus side.
